Blueberry Banana Bread Muffins

Surprisingly easy to make and extremely moist and delicious (plus no refined flour), this has to be on the top of your to-bake list!



Ingredients [makes 12 muffins]:

3 medium sized bananas (overripe)

1/2 cup castor sugar

2/3 cup flavourless oil

1 tsp vanilla extract

1 1/2 cup whole wheat flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/4 cup blueberries (frozen or fresh)


Method:

  1. Mash the bananas well using a whisk or fork. You can leave them chunky if you like.

  2. Add castor sugar to it and whisk well until the sugar dissolves.

  3. Add in oil and vanilla extract and whisk until it’s all combined well with the band bananas.

  4. Gently fold in whole wheat flour, baking powder, baking soda, salt and blueberries using a spatula.

  5. Line your muffin tray with cupcake liners and pour the batter half way through.

  6. Top with more blueberries if you like.

  7. Bake into a preheated 180°C oven for 15-20 minutes or until a skewer inserted emerges clean.

  8. Enjoy warm!



Important tips:

- Make sure to use overripe and mushy bananas.

- You can use any flavourless oil. Avoid olive or peanut oil.

- You can use any berries instead of blueberries, or skip it altogether.

- If you happen to not have muffin tray, feel free to bake this as a cake.
